Rinse and soak moong dal for an hour.

Grind it to coarse paste.

Prepare a semi soft dough using maida, salt, 1/3 bowl hot oil, lil water. Cover it with wet cloth and keep it aside for at least 30 minutes.

Heat oil in a pan, add cumin seeds, asafoetida, grated ginger, cumin powder, coriander powder and fennel powder, saute for a minute.

Add moong dal paste, red chilli powder,aamchur powder, garam masala and baking powder. Saute till it become golden brown and fragrant. Add salt and lil sugar and mix well. Stuffing for kachori is ready.

Make equal lemon sized balls of dough. Take a ball, roll it to small disc,,.

Stuff it with moong dal mix.

Make folds and close.

Roll again to 2.5" disc. Similarlly make all kachoris.

Deep fry these kachoris over low to medium flame.

Place these kachoris on kitchen towel and drain excess oil.

Serve hot with sweet tamarind chutney.
