Mixing the tuna well into the egg mixture makes it go really fluffy and soft when cooked.

In a bowl, mix the eggs, salt and pepper. Then add the tuna and mix well.

Heat olive oil in a frying pan, over a slow to medium heat.

Add the chorizo, and cook for 2-3 minutes. Then add the onion and continue to cook for a further 4-5 minutes or until the onions have softened.

Add the egg mixture and cook for another 5 minutes or until the eggs are fully cooked. Continue to break up the eggs by mixing well throughout the cooking time.
