Steps
- 1
Cut zucchini into 12 thin long slices
- 2
I’m a mixing bowl, combine goat cheese, 2 tablespoons basil, oregano, salt, and pepper. (If cheese is not spreadable, add 1/4 cup milk or water until it becomes spreadable.)
- 3
Spread a thin layer of the cheese mixture on one side of a zucchini slice. Place 6 tomato halves (cut side down) on the spreaded mixture on the slice. Spread a thin layer of the mixture on both sides of a second zucchini slice and place it on the tomatoes on the first slice. Add the same amount of tomatoes as the first slice. Repeat the process for the second slice with the third zucchini slice. That’s one serving. Repeat the same process for the next three servings.
- 4
Line up all servings next to each other. Drizzle with balsamic vinegar and olive oil. Sprinkle with remaining 3 tablespoons of fresh basil.
