Ingredients

  • 2 tablespoonsolive oil
  • 1shallot, finely chopped
  • 4 clovesgarlic, minced (1 1/2 tablespoons)
  • 1 poundlarge shrimp
  • 1 teaspoonkosher salt
  • 1/2 teaspoonred pepper flakes (if desired)
  • 1/4 teaspoonblack pepper
  • 1/4 cuplow-sodium chicken broth or white wine
  • Zest of 1/2 lemon
  • 1/4 cupfreshly squeezed lemon (1 lemon)
  • 2medium zucchini squash
  • 1/4 cupchopped fresh parsley leaves
  • 2 tablespoonsfreshly grated parmesan

Steps

  1. 1

    Heat oil in a large skillet over medium-low heat.

  2. 2

    Add the shallot to the skillet and cook until beginning to soften, about 3 minutes.

  3. 3

    Add garlic to the skillet and cook 30 seconds.

  4. 4

    Add the shrimp, salt, red pepper flakes, and black pepper to the skillet. Sauté for 3 minutes, until the shrimp are beginning to cook but are still translucent.

  5. 5

    Add chicken broth, lemon zest, and lemon juice to the skillet. Bring to a boil and cook for 1 minute.

  6. 6

    Using a spirilator, make zucchini noodles and add them and about 3/4 of the parsley to the skillet. Be sure that everything in the skillet is coated with the garlic-lemon sauce. Heat until warmed through.(Avoid over cooking or the noodles will become mushy)

  7. 7

    Sprinkle with remaining parsley and Parmesan.

  8. 8

    Serve warm with the sauce in the skillet.
