Ingredients

  • 300 gRed cabbage
  • Salt,pepper
  • 50 gButter
  • 100 gCooking apples
  • 10 gCaster sugar
  • 125 mlVinegar or red wine
  • 50 gBacon trimmings

  1. 1

    Quarter, trim and shred the cabbage.wash well and drain

  2. 2

    Season well with salt and pepper

  3. 3

    Place in a well buttered baking sheet

  4. 4

    Add the peeled and cored apples,cut into 1cm dice and sugar

  5. 5

    Add the bacon and vinegar,cover with a buttered paper and lid

  6. 6

    Cook in a moderate oven at 150°© 200°® for 1hour

  7. 7

    Remove the bacon and serve
