After three failed attempts with various recipes I found online, a friend gave me a successful recipe from Vefa Alexiadou, and I haven't changed it since!

After three failed attempts with various recipes I found online, a friend gave me a successful recipe from Vefa Alexiadou, and I haven't changed it since!

Rinse the rice in a fine mesh strainer.

Bring the water and salt to a boil.

Once boiling, add the rice, stir well, and simmer until all the water is absorbed. Be careful—the water will absorb quickly, even on low heat!

In 1/4 cup of the milk, dissolve the cornstarch and vanilla.

Bring the remaining milk and sugar to a boil. As soon as it starts to bubble up, add the rice. Stir well and simmer on low for 20 minutes. Watch closely, as it tends to bubble up.

Add the dissolved cornstarch mixture and stir constantly for 2-3 minutes.

Remove from heat and divide into small bowls.

When slightly cooled, sprinkle with a little cinnamon. Once completely cooled, cover with plastic wrap and refrigerate.
