Steps

In a mixing bowl beat egg with a whisk

Keep some blanched peas, corn and spinach separately and rest add to the beaten eggs.

Add other ingredients except boiled potatoes.

Mix them well.

Heat a pan and make a omelette out of the mixture.

Now heat some oil in a kadai and deep fry the chopped spinach kept separately.

Now in a mixing bowl mix together boiled potatoes with peas, corn, parsley and some black salt.

In a service dish place the omelette in the centre. Arrange the potato mixture around the omelette.

Garnish with fried spinach or as per your choice.I also used little shredded beetroot to garnish.
