Wash the carrots, then peel and grate them

In a thick bottom pan boil milk and add grated carrots. Cook them on slow to medium flame until soft and all milk is absorbed. Stir in-between.

Now add sugar and cardamon powder and keep stirring until it thickens. Add just one teaspoon ghee and stir. It will leave pan now. Mix half pistachios well.

In a greased plate pour the mixture and spread rest of pistachios and press little with a spatula to make it even. Let it cool and set.

Once it sets cut in desired shape and relish the healthy and tasty carrot barfi.

Ready to serve.
