Ox Tail Soup Instant Pot IP

Ok, since this was the first time I made this in the IP, I figured it would need a couple/few more attempts before being worthy to put on Cookpad. I was very wrong. But that is basically why I have no step photos this time. I had not planned on publishing it from the start. The broth was "over the top" and the Ox Tails perfectly cooked, so I had to share. The leftover broth I used the next day to make Ramen! It turned out so good. We used the crusty bread, ripped in pieces, to soak up the broth. I wanted to do something different from noodles or rice. It worked perfectly, but rice or noodles would be fine also. I might try this with short ribs, I think they would work great in this.
NOTE - a lot of Ox Tail recipes ask you to soak, and then par boil the tails. I did none of that, just so you know. I did rinse them under running tap water, just because, but that was it.

Steps

  1. 1

Cut off excess fat from ox tails

  2. 2

    Place ox tails in IP

  3. 3

Cover ox tails with water, about 1 to 1 1/2 inch above the top of the tails.

  4. 4

Add rest of first cook ingredients.

  5. 5

Set your IP to pressure cook (I used Meat/Stew actually) for 55 minutes.

  6. 6

After cook time is done, natural pressure release (NPR) for 10 minutes, than quick release (QR) remaining pressure

  7. 7

Chop you potato, celery and carrots to medium sized pieces, celery about 1 1/2 inches, carrot about 3/4 inch and potato 1 inch cubes.

  8. 8

If there is an obscene amount of fat, you can skim it off now also.

  9. 9

Taste! Adjust salt level if required.

  10. 10

    Add veggies to pot.

  11. 11

Set your IP to pressure cook 10 minutes

  12. 12

Allow NPR 10 minutes, than QR the remaining pressure

  13. 13

Serve with crusty bread to eat the broth with (dunk it in), but rice or noodles would work as well.

  14. 14

Garnish with scallion, cilantro, parsley, chives (what I used in the photo), sesame seeds, or nothing.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
