Strain the grated onion, keeping the juice. Use only 2 tablespoons of the remaining onion pulp.

Add the 2 tablespoons of onion pulp to the ground beef. Also add the onion juice, parsley, garlic, and spices.

Mix well until all ingredients are fully combined. Heat a piece of charcoal over the stove until it is red hot.

Make a small well in the center of the seasoned meat. Place a piece of aluminum foil in the well, then put the hot charcoal on the foil.

Pour 1 tablespoon of ghee or oil over the hot charcoal. You will see a lot of smoke, which is what you want.

Trap the smoke inside the kofta by covering it tightly with aluminum foil to prevent the smoke from escaping. This will give the kofta a smoky grilled flavor.

Shape the mixture onto skewers for grilling, then grill over low heat, turning regularly until cooked through.

After cooking, repeat the charcoal smoking process and cover the grilled kofta until ready to serve. Enjoy!
