In a large bowl take besan and make thick batter. Keep aside.
In another small bowl take salt, haldi, sugar and citric acid granules and mix all in 1/2 cup of water.
Pour this liquid in batter in mix well. Keep aside. - 2
Now grease ur mould or thali.
Put water in ur Steamer or dhokla maker. - 3
When water starts boiling take ur batter and add Eno (fruit salt) sprinkle little water and stir quickly and immediately our pour batter in greased mould or thali and keep it for steaming for 10 - 15 mins.

(Note : steam first 10 mins on high flame next 5 mins on medium flame)*

When done take out and let it cool for 5 mins to release steam.

Now in a tadka pan put 1 cup of water add little sugar and boil it. Pour this sweet water over khaman.

Slice khaman of ur desired shape and size.
When little cool.....cut in center and apply choice of ur chutnies and make like sandwich. - 8
Heat oil and put mustard seeds when splutter add green chillies. Stir for 1 min and pour tadka overall on khaman.

Garnish with coriander leaves / grated coconut.

Serve hot with mint chutney / ketchup/ besan kadi.
