Ingredients

26 servings
  1. 4bell peppers, (green, red, yellow, orange) diced
  2. 1sweet onion, diced
  3. 1-2jalapeno, diced
  4. 2 tbspSouthwest Seasoning
  5. 1 tbspGarlic Powder
  6. 2 cupsbroccoli slaw
  7. 2 cupsCheddar Cheese, shredded, fat-free
  8. 1small can green chilis
  9. 1tomato, chopped
  10. 1 packageegg roll skins
  11. 1egg white, lightly beaten

Steps

  1. 1

    Spray skillet with non-stick cooking spray. Saute peppers, onion and jalapenos for 2-3 minutes. Add Southwest seasoning and garlic powder mix well.

    Add broccoli slaw and continue cooking until tender.

    Remove from heat and let cool.

  4. 4

    Mix with tomatoes, chili, and cheese.

  5. 5

    Preheat oven to 350 F, spray cookie sheet with non-stick spray

  6. 6

    Add 1/4 cup of mixture to egg roll skin. Follow instructions on package for folding and rolling, place on cookie sheet.

  7. 7

    Brush with egg white. Bake for 10 minutes. Flip each egg roll and return to oven. Bake another 10-15 minutes until desired crispiness.

All of the descriptions on my recipes include the new "Smartpoints" value on Weight Watchers for each serving. Some are duplicates from others that I found online, with modifications to reduce the number of points or remove/substitute ingredients my husband and/or I don't like.I'm still new to the kitchen and cooking for two (normally I make recipes for 4 and pack the leftovers for lunch the next day) and am looking to learn more. If you have any suggestions for any of my recipes regarding ingredients or cooking methods please send me a message!!
