Ingredients

  1. 2whole garlic bulbs
  2. 1lemon, zested and juiced
  3. 1large bunch thyme, leaves only
  4. 1 tablespooncumin seeds, toasted and ground
  5. Pinchcrushed red pepper flakes
  6. salt
  7. EVOO
  8. Chicken Thighs
  9. 2 cupscouscous
  10. Extra-virgin olive oil
  11. 1large onion, sliced
  12. 3 stalkscelery, sliced thin on the bias
  13. red pepper flakes
  14. 1 1/2 cupsdry white wine
  15. 3 tablespoonstomato paste
  16. 1Large pinch saffron
  17. 2zucchini diced
  18. 2-3 cupschicken stock
  19. 3scallions (opt garnish)

Steps

  1. 1

    Preheat oven 375F

  2. 2

    Bake garlic bulbs let cool

  3. 3

    Squeeze garlic into processor with lemon zest, lemon juice, thyme, cumin, crushed red pepper and salt, to taste and add olive oil

  4. 4

    Marinate chicken in paste for at least 1 hour

  5. 5

    Brown chicken in olive oil

  6. 6

    Fry onions and celery in drippings add salt and crushed red

  7. 7

    Deglaze pan with white wine and cook onions and celery 7-8 mins

  8. 8

    Stir in tomato paste cook 2 mins

  9. 9

    Add saffron, zucchini, couscous chicken stock add to casserole dish

  10. 10

    Nuzzel in chicken skin side up add chicken stock to keep moist

  11. 11

    Bake covered 20 mins uncovered 10-15
