Spanish Lentils

Steps

Make sure you buy lentils that dont need to soak before cooking.
If not, dont worry, you need to leave them 24 hours in water before you are going to cook them - 2
Peel and cut all the vegetables and cut the chorizo in 2 parts.
Place them in a saucepan with a bit of olive oil and turn the heat on. - 3
Next, add the lentils and mix everything well.

Add water and bring it to boil, then cook slowly till the lentil is tender and ready to eat.
Add salt and pepper - 5
At this point you have to options:
1- leave it on the heat for one more minute, this way the water will consume and you have a nice lentils that you can eat with rice as a side dish.
Or
2 - turn the the heat off and serve it like a lentil soup
