Ingredients

  1. 8 clovesfresh garlic
  2. 1/2 cupolive oil
  3. 2lemons
  4. 1 tbsporegano
  5. 1orange
  6. 1 tbspcumin
  7. bunchcilantro
  8. 1 tspsalt (add more to taste)
  9. 2 lbsboneless skinless chicken thighs or breasts whichever you prefer, thighs tend to be juicier

    Clean chicken thighs, trim fat

  2. 2

    Peel and smash garlic cloves then dice fine

  3. 3

    To make marinade: In a blender add olive oil, juice from lemons and orange, cumin, salt. oregano, cilantro and garlic. Pulse blend well.

  4. 4

    In a ziploc bag add chicken thighs and blended marinade. Marinade anywhere from overnight to 1 hour.

  5. 5

    Grill chicken

  6. 6

    Dice chicken for tacos.

  7. 7

    Add chopped cilantro, onion and tomato to top off tacos
