Ingredients

  1. 1 lbsuper sweet corn
  2. 1/2small red onion; minced
  3. 2 cansdiced green chiles
  4. 2 Tcoconut oil
  5. 2 Tbutter
  6. 1/4 Csugar
  7. 1/4 Ccoconut vinegar
  8. 1lime; zested & juiced
  9. 1/2 bundlecilantro; chiffonade
  10. 1 pinchkosher salt and black pepper

    Heat butter and coconut oil in a large saute pan. Add red onion and a pinch of salt.

  2. 2

    When red onion is nearly caramelized, add corn and toss.

  3. 3

    Add sugar with a pinch of salt and pepper. Toss. Cook 30 seconds.

  4. 4

    Add coconut vinegar, diced green chiles, lime juice, and lime zest. Cook 1 minute.

  5. 5

    Add cilantro. Toss. Serve.
