Mmm, wonderful octopus that's easy and delicious... perfect as an appetizer with a little ouzo before the meal...

Start by boiling the octopus in a pot with vinegar and water.

Let it cook for about 40 minutes (depending on the size of the octopus) until it softens.

Remove it and let it drain a bit from excess liquids, then place it on a grill pan or griddle after preheating it.

Cook on high heat to create a crust as if it were grilled on a barbecue.

Once it reaches the desired color, serve with the lemon-olive oil sauce, which you make by mixing the olive oil, lemon, salt, and oregano in a shaker, and add mustard if you prefer.

Be careful to add the salt to the lemon-olive oil sauce at the end, as adding it earlier will toughen the octopus.
