Ingredients

6 servings
  1. 1/2 cupalmond milk
  2. 1tea sp bicarb
  3. 1/2 cupself-raising flour
  4. 1/2 cupsugar
  5. 2eggs
  6. 2table sp apricot jam
  7. 2table sp soft canola margarine
  8. 1/4tea sp salt
  9. 1 cupboiling water
  10. 2table sp canola margarine
  11. 1 cupcoconut cream
  12. 3/4 cupsugar
  13. 1tea sp vanilla

Cooking Instructions

45 mins
  1. 1

    Set oven to 180 deg C

  2. 2

    Mix the following together in a tea cup and put it to one side: ½ cup almond milk
    1 tea sp bicarb

  3. 3

    In your ovenproof dish, mix the following: ½ cup self-raising flour
    ½ cup sugar 2 eggs
    2 table sp apricot jam
    2 table sp soft canola margarine
    ¼ tea sp salt

    Now add in milk/bicarb mixture and mix

    Bake 180 deg C for 30 min

    While above is baking, boil the following :
    1 cup boiling water
    2 table sp canola margarine
    1 cup coconut cream
    ¾ cup sugar
    1 tea sp vanilla

  7. 7

    Be very careful this boils over very easily, watch it all the time!!!!!!!!

    After 30min, check to see if pudding has cooked though, and removed from oven.

    Pour the syrup over pudding and leave to cool.
