I was at Muritala Mohammed international airport recently and bought chicken pies at Eddie burger kings stand . One small pie went for N500. I was like whaaaaaaat. But one thing I liked about it was that just two ingredients was used for the inside sauce.
Spiralled chicken, diced carrots with enough curry. Yummy and soft.
I knew I will make mine at a free time. And it was really yummy. I pounded my chicken because I didn't know how they came about their spiralized chicken.

Ingredients

  • Chicken cooked, diced and pounded
  • Irish potatoes diced
  • Carrots diced
  • Curry and thyme
  • 3 cupsflour
  • 200 gramskings baking magarine
  • Halfteaspoon baking powder
  • Pinchsalt
  • Tap water
  • Sliced onions
  • cubesSeasoning
  • Halfcooking spoon vegetable oil
  • 1egg wash

Steps

  1. 1

    Boil the chicken until
    Cooked.Drop from heat and diced into tiny bits. I pounded mine a bit in a mini pounding mortar

    Place pan on heat. Add the half cooking spoon vegetable oil. Allow to heat. Add onions and sauté for some minutes.

    Add curry and thyme, add the chicken bits, the diced potatoes and carrots.

    Allow to cook for some minutes

  5. 5

    Add two tablespoons flour to water. Add it to the chicken sauce and stir. Add seasoning. Taste for salt and drop from heat.

    Mix the flour and magarine in a bowl until crumbly

  7. 7

    Add water gradually to get a soft pliable dough. The softer the dough, the softer the pie. Depending on how soft or hard you want

    Allow the dough to rest in the fridge or out of fridge for 20minutes.

  9. 9

    Roll out the dough in a rectangular shape that is four corners. Use a knife to cut it out.

  10. 10

    Take spoons of the chicken sauce and place in the middle. Brush the edges with egg wash.

  11. 11

    Fold one end of the shape to cover the other. Brush the pies with the egg wash and bake in a preheated oven for 40 minutes until brown.
