Ingredients

  1. 1medium size Bok Choy
  2. 4(or to taste) garlic cloves
  3. 1 inchpiece of fresh ginger
  4. 1/2 tspsalt
  5. handfulwalnuts
  6. to tastehot sauce
  7. 1Tbl. acid like vinegar, lemon juice (optional)
  8. 2Tbl. oil for stir-fry

  1. 1

    Clean your bok choy breaking off each stem and making sure tops and stalks are clean. Grit sucks!

  2. 2

    chop your bok choy into about 1 - 2 inch pieces

    Add oil to pan, set on medium high heat (I'm using sesame here, but any works)

    chop onion, garlic and ginger

    When pan is hot, add onion, garlic and ginger. Stir fry until onion is translucent, about 2 minutes

  6. 6

    Add bok choy to pan, stir all the time until wilted. Sometimes you have to add the thicker stems first, then add the tops after a couple minutes for even cooking.

    Once bok choy is wilted add walnuts

    Add salt and hot sauce, acid if using. Stir constantly until done, 3 minutes

    Serve. Shown here with a pan fried tenderized lightly breaded steak with pan gravy.

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
