Beans... served with rice and pineapple carrot salad
It took me a while but i finally perfected it for my family ... i hope everyone enjoys it as we do...
Cooking Instructions

Soak your beans for 30 min before boiling them.. using a pressure cooker.

Boil your rice garnish with seasoning and add coconut milk to your taste.

The beans are now cooked... prepare onions, garlic and tomatoes.

Fry your onions,add garlic till they turn medium brown, add tomatoes, stir till they blend with the onions to form a paste.

Add your boiled beans and mix them well,and salt, seasoning and coconut milk to taste.

Add little water to bring it to boil, cover it for a while in medium heat.

Slice your pineapple into small sizes, grate your carrots and mix with the fine chopped pineapple.

Serve your fried beans with rice and pineapple carrot salad and enjoy..

I created this recipe because I wanted to make filling dish that doesn't use meat.The key is to cook the tofu well until the moisture is completely evaporated! Draining the tofu in ahead of time reduces the amount of cooking time, but it was troublesome for me, so I didn't bother doing it.
