Garlic Pork Salad/Rice Bowl

This was an attempt at a flavor full yet slightly healthy dish. It actually worked out really well. You could use any meat or tofu. The veggies you use can be your choice. This is one of those "let's see what I have" sort of meals. This is garlicky, but that was my goal. But for us, not overpowering. It looks complicated, but it wasn't really. I used red leaf lettuce, I suggest a not to stiff type, or you can cut it smaller if you use something like Romain.

Cooking Instructions

  1. 1

  2. 2

Using a garlic press, knife, what have you, smash or press garlic into rough paste, add to meat.

  3. 3

Add acid (I'm using lime juice here) vinegar, lemon, all acceptable.

Heat a wok/stir fry/skillet on medium heat, add a little oil

  7. 7

Carefully dump marinated meat in when pan is hot

  8. 8

Clean and chop your garlic. If using onion, dice that also

  9. 9

When meat just turns from pink, add garlic and if using onions

  10. 10

I'm using green beans, celery and mushrooms, clean your veggies

  11. 11

Chop into whatever sized pieces you like

  16. 16

Tear lettuce into pieces, and the goal is to line a bowl with it leaving a slight hollow in the center

  17. 17

Add some cooked rice to the center hollow

  18. 18

Place some meat mixture on top

  19. 19

Garnish with sesame seeds, green onions diced or sliced.

  20. 20

Let each person pour the amount of sauce they want on top

My wife is disabled, she has M.S. And she finds it hard to cook from her wheelchair. I like a variety of foods, but hate tomatoes, so you don't see too many of my recipes with tomatoes on them. Also both of us have type II diabetes, so high carb and sweet is usually not on the menu either. We have one married daughter, and one that now lives in the Seattle area. We live in Texas, USA with our two dogs.Sorry I have not posted in awhile. Been taking chemo and radiation. and it has taken some out of me. Doctor says it seems to be working, so there is that.
