My husband bought a bunch of bananas for an offering, and I didn’t know what to do with all of them, so I decided to make some ice cream to fill up the freezer 😂

Slice 5 bananas lengthwise into 3 pieces each. Chop the remaining 3 bananas into small pieces.

Crush the roasted peanuts until about 70% broken up, after removing the skins.

In a pot, combine the coconut milk, whole milk, and sweetened condensed milk. Heat gently and stir until the condensed milk is fully dissolved. Taste and adjust sweetness if needed, then turn off the heat. Add the chopped bananas and mix well. Let the mixture cool almost completely, then stir in the yogurt until smooth. Taste again and adjust sweetness if needed. Add the yogurt at this stage to keep the mixture smooth.

Prepare two 4-cup (900 ml) rectangular plastic containers. Spoon 2-3 ladles of the mixture into each container to form a base layer. Arrange the banana slices on top—use as many or as few as you like, just make sure there’s enough for both containers. After arranging the bananas, sprinkle peanuts and shredded coconut evenly over the surface. Add another 2-3 ladles of the mixture to cover the coconut completely.

Sprinkle more shredded coconut and peanuts on top for decoration. Once both containers are filled, place them in the freezer. After 2-3 hours, the ice cream is ready to enjoy. Hope everyone enjoys it!
