All time favourite breakfast/lunch recipe of UP specially in Agra region . And no north Indian festival completed without aloo puri😋😀.
Steps

For puri soak urad dal for atleast 5 hr and grind it into a corse paste with green chilli

Now prepare a semi soft dough by mixing all the ingredients and rest it for 30 minutes.

Now deep fry it by making puri of ur desired size.important thing keep these puri slightly thik thn and normal puri and fy it on medium flame.

For aloo :- heat oil in a *CAST IRON PAN*(for great taste and texture)

Add all the dry masala aling with green chilli and ginger except kasuri methi.

Cook it for 30 second now add crushed aloo and mix it well and cook it for 2 minutes

Add 300 ml water and boil it on medium flame fot 15 minutes

Now add garam masala curd and kasuri methi and again cook it for a minute. Keep this aloo sabji little watery for batter taste with puri.

Aloo and puri is ready.Enjoy
