Nick's amazing seafood pasta

This is a dish inspired by a popular local restaurant. It's my take on this great dish. You may want to have some fresh garlic bread to go with this amazing dish. Please note I do note give measurements for the ingredients. I am very much a season to taste type of cook and thus do not make any type of measurements. Just keep tasting throughout the process and add as you feel fit. I hope you enjoy this wonderful recipe.

In a sauce pan, combine tomato sauce, oregano, basil, parsley, mushrooms (diced), chilli flakes, salt, pepper. Bring to a simmer for 10 minutes. Add sugar to help cut the acidity of the tomato sauce to your liking.

In separate pot get your water ready for your pasta. Salt to taste.

After the sauce has simmered for 10 minutes, add all the whipping cream and capers, bring back to a simmer.

Add all the seafood and bring back to a simmer.

By this time your water should be ready for the pasta. Cook to your taste.

Keep the sauce simmering while you cook your pasta. Ensure that all the muscles have opened, discard any that are still closed. Add fresh Parmesan cheese to the sauce.....again to taste.

Once your pasta has finished drain and save a little of the water to add to your sauce. At this point you can use a thickening agent (I used corn starch and water) to thicken the sauce.

Add as much sauce to your pasta as you like and enjoy!!
