While rice cooks chop all your veggies and then saute with olive oil

Combine veggies, rice, condensed soup, sour cream, and seasonings in large casserole dish

Top with shredded cheese

Top with stuffing or bread crumbs

Pour melted butter on top

Cook for 30 minutes until bubbly and the stuffing is browned
