Ingredients

  1. 5Eggplant thin slices
  2. 1 tspTurmeric powder
  3. to tasteSalt
  4. 1/2 cuprefined oil
  5. For paneer filling
  6. 1/2 cupScrambled paneer
  7. 1 tbspChopped onion
  8. 1/2 tspChopped garlic
  9. 1 tbspChopped coriander leaves
  10. 1 tspChopped green chilli
  11. 1 tspTurmeric powder
  12. 1/4 tspGaram masala powder
  13. 1 tspSugar
  14. 1 tbspRefined oil
  15. to tasteSalt

Steps

  1. 1

    Mix salt and turmeric powder with eggplant slices.

  2. 2

    Heat oil in a pan.

  3. 3

    Add onions, garlic, chillies and fry for 30 seconds on a medium flame.

  4. 4

    Now add the rest of the masala and paneer.

  5. 5

    Saute for 2 minutes on a low flame.

  6. 6

    Place the paneer masala on eggplant slices.

  7. 7

    Now roll them up.

  8. 8

    Deep fry on a medium flame and serve hot.
