Clean and cut the chicken in desired size... Place in a sufuria with water it's same level as meat and bring to boil... Once ready set aside...

In the same sufuria, place the oil and let heat and put the spices toasting them...for about 30sec...on medium heat

Add in the chopped onions and let it cook till browned

Add in the crushed garlic and ginger and let it sweat

Add in the chicken and and a bit of the chicken broth to prevent food from sticking...letting it cook for about two minutes while covered

Add in the tomato paste... And the soy sauce diluted with about 100ml water... Evenly mix and let simmer for about 1min

Add in the rice and mix.. Add in the left over broth and some water in case it's not enough to cook the rice

Cook on high heat for the first 7-10min...once almost cooked and a little water is left... Reduce to low...

Once all water dries... I cover with wet paper (I use the wheat flour packets) and the sufuria cover.....and let the rice cook completely with the steam..

Once ready... Serve while hot

I served with kachumbari and homemade chilli
