Wet fry matumbo
Goes very well with hot soft ugali.
Steps

Clean n rinse your matumbo very well before dicing.

Rinse again well in running water after dicing.

Bring to boil.

Chop all your vegetables accordingly.

In a frying pan, add cooking oil n heat abit.

Add onions, cook abit, add leeks n cook till brown.

Add tomatoes n mix well.

Add green pepper, garlic n ginger. Mix well.

Add tomato paste n salt, black pepper as u mix.

Add in your matumbo n give it a good mix.

Reduce the heat, cover your pan n let your matumbo cook till tender.

Add some few minutes you may opt to add some very little water.

Once ready, put off the heat then add dhania n mix well. If you had left some chopped onions n tomatoes, feel free to add them in at this point as u mix. Your matumbo are ready, serve at your own leisure.
