I have had many Mushroom soup recipes with Cream but just adding that onion and extra block of chicken stock gives that smooth taste without the need for cream.

In a large saucepan, melt butter over medium heat. Cook mushrooms and onion in butter 10 minutes.

Sprinkle flour over mushrooms. Pour in stock, a little at a time, stirring constantly.

Stir in stock cube, Bring to the boil, then remove from heat and stir, blend with a mixer then Serve.
