This vegetable-loaded meatloaf is filled with fiber. Combined with bacon, it will satisfy your desire for comfort food without adding on the pounds.

Ingredients

  1. 1onion, coarsely chopped
  2. 3garlic cloves, chopped
  3. 1tomato, chopped
  4. 4 Tbspbasil
  5. 1orange or yellow pepper, chopped
  6. 4 cupskale or collard greens (can use frozen or chop up fresh)
  7. 3eggs
  8. 1 cuprice flour (if desired)
  9. 3 lbsground beef or ground turkey (I use a mixture of both)
  10. 1 lbbacon or turkey bacon

Cooking Instructions

    Sautee the onion and garlic for 5 minutes in the oil of your choosing. Add the bell pepper and sautee for 5 more minutes. Add the kale or collard greens and sautee for 1 more minute.

    While that's cooking, chop up the bacon or turkey bacon and sautee for 5 minutes.

    Place all the other ingredients into a bowl, then add the vegetables that you just cooked. Mix them together, put them into 2-3 9x11" baking pans.

    Bake at 375 degrees for 30-40 minutes, until cooked through the center and a little crispy on the outside.
