This vegetable-loaded meatloaf is filled with fiber. Combined with bacon, it will satisfy your desire for comfort food without adding on the pounds.
Cooking Instructions

Sautee the onion and garlic for 5 minutes in the oil of your choosing. Add the bell pepper and sautee for 5 more minutes. Add the kale or collard greens and sautee for 1 more minute.

While that's cooking, chop up the bacon or turkey bacon and sautee for 5 minutes.

Place all the other ingredients into a bowl, then add the vegetables that you just cooked. Mix them together, put them into 2-3 9x11" baking pans.

Bake at 375 degrees for 30-40 minutes, until cooked through the center and a little crispy on the outside.

I have never liked meatloaf so I had never made it before. A few years ago I asked my husband what he wanted me to make for dinner on his birthday. He asked for meatloaf and told me to make it any way I wanted to. I made and cooked two meatloaves so I could freeze one for a later dinner. After I defrosted it , I decided to serve it in a new way and what doesn't taste great with bacon, cheese and barbecue sauce? We rarely have "leftover" meatloaf but I think I'll make two from now on!
