Gorditas with Pressed Pork Cracklings

Finely chop the cilantro and onion into small pieces.

Cut the pressed pork cracklings into small cubes.

Heat enough oil in a skillet until hot.

Take a ball of masa about the size of your hand, make a small well in the center, add a handful of pressed pork cracklings, close it, and shape it into a thick tortilla.

Place it on the hot skillet, flipping only once. You'll know it's ready when the masa changes color.

Once cooked on both sides, let it drain on paper towels. Then slice it open and fill with cilantro, onion, fresh cheese, and arbol chili salsa. Enjoy! I’d love to see photos of your finished plates!
