This was my first attempt at home-made salsa. I made this about two weeks ago with fresh peppers from the garden. Most of these quantities are after the fact approximations; at the time I was just using whatever I had on hand without measuring most of it.

Ingredients

  • 28 ozcan crushed tomatoes (w/ sea salt and roasted garlic)
  • 3diced hot peppers
  • 1 earsteamed corn off the cob
  • 7diced assorted peppers
  • 2diced tomatoes
  • 1 tbspsriracha
  • 1 tspchilli powder
  • 1 tspground cayanne
  • 1 tspground ginger
  • 1 tspgarlic powder
  • 1 tsppaprika
  • 1 tspparsley
  • 1 tspblack pepper
  • 1/2 tspsalt
  • 3 ozapple cider vinegar

Steps

  1. 1

    Combine crushed tomatoes and hot peppers in a blender

  2. 2

    Combine all the ingredients in a large pot

  3. 3

    Bring to a boil

  4. 4

    Reduce heat and simmer until slightly thickened, stirring occasionally

  5. 5

    Remove from heat and fill jars and/or serve
