  1. 5-6yellow onions
  2. 4medium sweet bell peppers
  3. 5-6jalapeno peppers
  4. 4 Tablespoonsbeef base
  5. 4 oz.minced garlic
  6. 6 TablespoonsWorcestershire sauce
  7. 2 Tablespoonscumin
  8. 2 Tablespoonscayenne
  9. 2 Tablespoonscajun seasoning
  10. 2 TablespoonsBasil
  11. 2 TablespoonsThyme
  12. 2 TablespoonsCelery salt
  13. 2 Tablespoonsgranulated garlic
  14. 2 Tablespoonsonion granules
  15. 4 Tablespoonsroasted garlic pepper
  16. 4 Tablespoonsmontreal steak seasoning
  17. 5lbs. ground chuck
  18. 1#10 can dark kidney beans
  19. 1#10 can diced tomatoes
  20. 1#10 can crushed tomatoes
  21. 1 1/2 cupsdark chili powder
  22. 2 TablespoonsCholula hot sauce
  23. to tasteblack pepper
  24. shredded jack cheese

  1. 1

    Dice onions, peppers and jalapenos and mix with all spices,beef base and Worcestershire. Add minced garlic and sweat in large.pot.for 20-25 minutes. Stirring occasionally to avoid scorching.

    Brown and drain ground beef. I like to season as its cooking with Montreal steak seasoning and roasted garlic pepper.

  3. 3

    Add drained ground beef to pot with kidney beans, crushed and diced tomatoes. Mix thoroughly.

  4. 4

    Add cholula and black pepper to taste and let simmer on low for hours.

  5. 5

    Serve topped with shredded jack cheese and enjoy!
