Since always have leftover rice. Gonna do a healthy dish which can also make kids eat their veggies!

Ingredients. Mostly leftovers.

Med Heat ~Little oil add in the veg stem first. pan fry 30 secs then add in all veggies and rice and mix and stir fry for 2 mins until rice breaks apart. Then add in 1 tsp of salt and stir.

Make a hole in middle and pour in the egg white. Avoid mixing with rice.

Just cook like scrambled eggs in middle. when its 70% cooked, mix well with the rice.

Stir well for 1 min. DONE! I prefer less salt since usually serve with other dish.
