Mini Tarts with Jam and Pineapple

I found this recipe in a cookbook by Nikos Tselementes as pineapple tartlets. As usual, I tweaked it to suit my taste. For the dough, I used my own Pasta Flora dough recipe with olive oil (https://cookpad.wasmer.app/gr/sintages/4932695-pasta-phlora-me-elaiolado). I didn’t have special tartlet pans, so I used muffin tins instead. The whole pineapple slice didn’t fit, so I cut it into smaller pieces. Still, they turned out wonderful!

Prepare the dough according to the instructions. Grease and flour tartlet or muffin tins. Take a small piece of dough, roll it into a ball, and flatten it in your hand to make a thick round. Press it into the tin.

Spread a little jam on the bottom of the dough, then place a pineapple slice on top. If the slice doesn’t fit, cut it into smaller pieces.

Bake in a preheated oven at 350°F (175°C) for about 30 minutes.

Let cool, then remove from the tins.
