Lemon cake #baking contest

Preheat oven to 175 degrees

Grease your baking pan

Whisk butter/ margarine, sugar and lemon zest together... Cream well it it changes colour

Add eggs one at a time as you whisk
- 5
Add lemon juice and vanilla essence and mix well

In a separate bowl sieve the dry ingredients: Flour, baking powder and 1/2 teaspoon of ginger (optional)

Fold in the dry ingredients into the wet ingredients prepared

Mix the water and food colour to ensure well dissolved (if using powder) and add to the batter till right consistency is achieved.

Transfer to greased baking tin and bake for 40- 50 mins at 180 degrees till a toothpick inserted comes out dry.

Once ready, sprinkle some fresh lemon juice mixed with glucose syrup... Let it settle... Cover with cling film to avoid loss of moisture... Set aside on wire rack to cool well.
