Crack the eggs in the mixing bowl

Beat lightly using a whisk or hand mixer

Add sugar whisk until fully mixed

Add the oil mix until fully mixed and vanilla essence and continue mixing until fully incorporated.

Sift the flour, baking powder and nutmeg, and cinnamon. Add into the mixture folding gently

Add grated carrot, fold into the batter

Mix in the dried mixed fruit, folding the gently

Add the desiccated coconut

Using a large spoon scoop the mixture and pour into you muffin tins. pour in all the cups upto 3/4full

Place in a preheated oven at 180C. Use an oven thermometer

Bake the muffins/queen cakes for about 20mins. This will also depend on the size of the muffins

A small knife inserted at the center of the cake should come out clean

Set aside to cool completely

You can serve this with your favorite drink
