Steps

Keep all the ingredients- tomatoes, onion, coriander and chillies chopped.

Put a tsp of oil or butter in the pan. Spread a ladle full of dosa batter on dosa tawa or nonstick tawa.(The nonstick pan would produce a good dosa but it will have an artificial taste the iron kalla would give a fried taste and the veggies would get fry marks also. I'm sure you would never forget it's taste.) Don't wait for the underside to cook, immediately put the toppings on the dosa starting with tomatoes, then onions, then coriander and at last green chillies.

After 2-3 mins flip the dosa.(It would need a bit of practise, maybe the dosa would break if the toppings are overflowing.)

After flipping press the dosa with a flat spatula, put oil on the sides.

NOW ! Let this side get cooked for around 7-9 mins(you will get a beautiful aroma now)

Now with a lot of practise slide the spatula and flip the dosa very violently(yes then only the spatula would go in)

(you would see beautiful marks on the veggies) now after 10-20 sec lift the dosa and keep on your serving plate. Top it with oregano and basil. Serve hot.
