Dirty Rice (Mexican Style)
Great way to use up leftover rice.
Steps
- 1
Chop onions and bell pepper.
- 2
Brown ground beef over medium high heat. (If beef has low fat like 95% then brown over low heat and you might need to add oil.) Drain most of the fat.
- 3
Lower heat then add onion powder, chili powder, and cumin. Mix then raise heat to medium and add bell pepper and onions. Cook until vegetables are softened about 2 minutes.
- 4
Drain corn and beans. Add diced tomatoes, corn and beans. Mix.
- 5
Add rice. Mix well until smooth and warmed through. Squeeze lime over top. Mix and taste. Add salt and pepper as needed. Enjoy!
- 6
If it starts to get dry or burn you can lower heat and add a little beef broth.
