Oven-Baked Chicken Thighs with Beer

I've often heard about beer chicken, or chops, or sauces made with beer. My wife even makes them regularly, but I had never tried it myself. Some might say there's no skill involved, and that's true. But if I look back just a year or so, I would only enter the kitchen to snack (not to look, not to participate) and then leave. The few times I fried an egg, I used a kitchen towel as a shield and poured the oil over the egg from a distance with a spatula. To remove it, I would take the pan off the heat and let it stop boiling before taking out the egg. Honestly, I think I've made some progress since then.
Oven-Baked Chicken Thighs with Beer

Cooking Instructions

Clean the chicken thighs of feathers or excess fat, season with salt and pepper, and set aside.

Slice the potatoes into 1/2-inch thick slices and place them at the bottom of the baking dish you will use.

Slice the onion into thin strips and spread over the potatoes. Lightly season everything with salt and pepper.

Place the chicken thighs on top of the potatoes and onion. Drizzle oil over the thighs and potatoes, and pour half a can of beer over them. (Be careful not to use too much oil.)

Place in a preheated oven at 350°F (180°C) for one hour. Turn the thighs over, pour the rest of the beer, and bake for another 20 to 25 minutes. Check occasionally, and if needed, use a ladle to baste the thighs with the juices from the bottom. Remove and enjoy juicy, delicious thighs.
