Hondureño Curtido

Rachel Leigh @cocinando_amor
Cooking Instructions
- 1
Mix all veggies in a bowl.
- 2
Boil a small pot of water. Enough to emerge the veggies all at once. When water is boiling turn off the heat. Plunge veggies into boiling water for 3-5 minutes. (The less time you cook them the crunchier veggies will be.)
- 3
Remove veggies from water and drain. Season with very small amount of oregano and salt.
- 4
Drizzle with vinegar. About 1/4c. should do. Just till slightly coated. Dont add too much or it wont taste right. Let sit for at least 30 min. The longer you leave it the stronger the flavor becomes.
