White rice and stew with steamed spinach
I make this to spice up white rice any day

Wash and boil rice with some salt till cooked

Blend tomatoes and pepper with one onions

Put oil in frying pan,dice and fry remaining onions
- 4
Add boiled tomatoes and pepper and leave to cook
- 5
Add meat and fish with either fish or meat stock
- 6
Add seasoning cubes and salt to taste
- 7
Shred spinach and put in a pot to steam for about 2mins
- 8
Fry plantain and serve meal as shown
