Gigantes in the Slow Cooker

The slow cooker, also known as a crockpot, is an electric pot that cooks food slowly over several hours at a low temperature. This is convenient because it doesn't require supervision (you literally put the ingredients in the device and go to sleep!), which is especially helpful for busy people who don't have time to cook, and the food turns out very tasty! I use a device whose pot can be placed on the stove for browning, but this step is not mandatory; we can skip it if we want our food lighter.

Soak the large lima beans for at least 12 hours.

Slice the carrots into thin rounds.

Chop the onion in a food processor, not too finely, into small pieces. Also chop the celery root finely.

Sauté the onion in half of the olive oil, then add the carrots, and finally the celery root.

Add all the herbs and spices and then the tomatoes.

Pour in three cups of hot water. I use this cup, which is 350ml, so roughly we need about a liter of water.

Mix well, add the large lima beans, pour in the remaining olive oil, and mix again.

Cook on low for 8 hours.

I put them in before leaving for work, and when I returned 8 hours later, they were ready, creamy, and delicious! 😊
