Place the ribs in a pot and add just enough water to cover them. Add salt.

Cook until the water is absorbed.

Brown the ribs in their own fat. If there is too much fat, remove the excess.

Blend the soaked chiles with the onion, garlic, spices, and about 1 1/2 cups water. Note: You can mix and use your preferred dried chiles.

Strain the sauce and add it to the ribs.

When it starts to boil, let it cook for about 5 minutes to concentrate the flavors.

Finally, add the beans and let everything simmer for a few more minutes. (You can add more bean cooking liquid or water, and use your preferred type of beans.)

Enjoy! I forgot to add the cheese for the photo, and personally, I like to add lime. The beans turn out thick and delicious.
