Ingredients

Serves 4-6 servings
  1. 1.1 lbsground beef (about 500 grams)
  2. 2large carrots, peeled and diced
  3. 2large potatoes, peeled and diced
  4. 2large zucchini, diced
  5. 3/4medium onion, finely chopped
  6. 1large garlic clove, finely chopped
  7. 2bay leaves
  8. 2 pinchesoregano
  9. 1 pinchcumin
  10. 1 sprigcilantro or epazote for extra flavor (optional)
  11. 1small box tomato puree
  12. 3 1/3 cupswater (about 800 ml), or as needed for desired brothiness
  13. Salt, to taste

    In a pot, heat a little oil and sauté the vegetables (carrots, zucchini, potatoes) for about 1 minute. Add the onion and garlic. Mix well.

    Next, add the ground beef and stir. Add the spices (bay leaves, oregano, and cumin).

    Once the meat is browned, pour in the water, tomato puree, and cilantro or epazote (if using).

    Season with salt and cover. When it comes to a boil, reduce the heat to low and cook for 10 minutes to let the flavors blend.

    Taste and adjust seasoning, then turn off the heat and serve.

    Serve with rice and/or beans if you like.
