In a pot, heat a little oil and sauté the vegetables (carrots, zucchini, potatoes) for about 1 minute. Add the onion and garlic. Mix well.

Next, add the ground beef and stir. Add the spices (bay leaves, oregano, and cumin).

Once the meat is browned, pour in the water, tomato puree, and cilantro or epazote (if using).

Season with salt and cover. When it comes to a boil, reduce the heat to low and cook for 10 minutes to let the flavors blend.
