Ingredients

  • 170 gsponge cake flour
  • 150 gcaster sugar
  • 2 tablespoonwhole milk powder
  • 1 tablespooncornflour
  • 1/4 teaspoonbaking powder
  • 1/8 teaspoonfine salt
  • 240 mlwarm milk
  • 1 teaspoonvinegar
  • 90 mloil

Steps

  1. 1

    Pre-heat the oven to 160°C.
    In a bowl whisk sieve flour, milk powder, baking powder, salt, sugar and corn flour. Mix well and keep aside.

    In another bowl add milk and vinegar and leave aside for 10 minutes. With a hand whisk, whisk the vinegar and milk for a minute.
    Pour the milk and vinegar mixture, vanilla and oil into the flour mix and mix until smooth batter.

  3. 3

    In a lined cupcake tray pour the mixture just above 1/2 way. Use ice cream scoop so you can have same quantity in each case.
    Bake in the preheated over for 15 to 20 minutes or until a tooth pick comes out clean.
    Please keep checking after 15 minutes or the cakes will be overcooked and can become hard on top.

Hi all, my name is Rekha. I am Indian by birth, born in Uganda, East Africa, I now live in Wilby, Northamptonshire/England.I retired at the age of 60 due to severe arthritis. I am married, a mother and grandmother.I learnt to cook from my parents at a very young age of seven. I started to cook simple dishes for the family and gradually learnt how to cook. My mum use to cook at our shop where we sold Indian sweets and savouries. I have learnt a lot from my mum. I started cooking fusion dishes and learning from others. My strong point is making sweet dishes and innovating new dishes. I can improvise and be creative in leftover dishes.I love being on Cookpad because I can share and learn new recipes. I have also made a lot of friends.

In uk u can get sponge flour but self rising flour can be used instead.
