Ingredients

  1. 2 sticksmelted butter
  2. 1 1/3 cbrown sugar
  3. 6 Thoney
  4. 4large eggs
  5. 1 (15 oz)can of pumpkin puree
  6. 2 cups(4 medium) mashed banana (freeze then thaw keep juice)
  7. 4 Twater
  8. 2 tvanilla
  9. 3 cwhole wheat flour
  10. 1/2 tbaking powder
  11. 2 tbaking soda
  12. 1 1/2 tsalt
  13. 2 tcinnamon
  14. 1 tground ginger
  15. 1 cchopped walnuts (optional)

Steps

  1. 1

    Preheat the oven to 350°f and grease 2 loaf pans.

  2. 2

    In large bowl combine butter, sugar, honey, eggs, pumpkin, water, vanilla, and banana. Mix well.

  3. 3

    In a separate bowl combine all remaining ingredients except for the nuts. Slowly mix into the wet ingredients. It will form a fairly stiff batter.

  4. 4

    If using nuts fold in just before baking. Bake for 55 to 70 minutes or until knife inserted in center comes out clean. Cool on tacos and enjoy!
