In a large bowl, combine the semolina, all-purpose flour, salt, and the butter or clarified butter with oil. Mix well until fully incorporated.

Cover with plastic wrap and let it rest, preferably overnight.

The next day, break up the mixture with your hands to loosen any clumps, then gradually add orange blossom water until you get a soft, workable dough.

Take a portion of the dough and shape it into a rectangle. Add the filling (dates or date paste mixed well with a little water, a pinch of cinnamon, and clove for flavor; you can also add toasted sesame seeds).

Seal the dough well, making sure to completely cover the filling, then gently roll it with your hands until smooth and about 3/4 inch (2 cm) thick.

Use a special makroud mold to press a pattern onto the dough, making sure the design is clear.

Cut the pieces with a knife or a special cutter.

Arrange the pieces side by side on a baking sheet without leaving gaps between them.

Bake in a preheated oven at 400°F (200°C).

Once the bottoms are golden, turn on the top heat to brown the tops until beautifully golden.

Let them cool, then drizzle with a small amount of thick honey (since the filling is already sweet) and sprinkle with sesame seeds. Enjoy!
