Ingredients

1 tspcanola oil
1/2 bagHash brown potatoes, frozen shredded
to tasteSalt & Pepper
3/4 cupcheddar cheese, shredded
4Eggs, whisked
4 slicesBacon, crumbled
Scallions, sliced ( for garnish)

Steps

Heat canola oil in a large skilet over med heat

Add potatoes, brown til crisp and season with salt and peppet

Add 1/2 cup cheddar cheese, eggs, and bacon, top with remaining cheese and scallions.

Bake at 350 F for 10 mins ( until eggs are cooked and cheese melted
