Ingredients

  1. 1 tspcanola oil
  2. 1/2 bagHash brown potatoes, frozen shredded
  3. to tasteSalt & Pepper
  4. 3/4 cupcheddar cheese, shredded
  5. 4Eggs, whisked
  6. 4 slicesBacon, crumbled
  7. Scallions, sliced ( for garnish)

Cooking Instructions

  1. 1

    Heat canola oil in a large skilet over med heat

  2. 2

    Add potatoes, brown til crisp and season with salt and peppet

  3. 3

    Add 1/2 cup cheddar cheese, eggs, and bacon, top with remaining cheese and scallions.

  4. 4

    Bake at 350 F for 10 mins ( until eggs are cooked and cheese melted
